Store
Keep beetroot unwashed in the fridge crisper drawer. If the leaves are attached, trim them off first (they draw moisture from the root). Stored this way, beetroot keeps well for a couple of weeks.

Prep
Scrub well under cold water. There’s no need to peel before cooking - the skin slips off easily once cooked. If using raw, peel first.

Eat raw or cook
Beetroot can be grated raw into salads for crunch and sweetness. It’s also great roasted, boiled, or steamed. Once cooked, rub off the skin, then slice, dice, or wedge as needed.
