    Keep capsicums whole and unwashed in the fridge crisper drawer. They’ll keep best when used within a few days.

    Prep
    Wash just before using. Cut around the core, remove seeds and white pith, then slice or dice.

    Eat raw or cook
    Capsicums are great raw in salads and platters. They’re also excellent roasted, stuffed, stir-fried, grilled, or added to sauces. Red capsicums are sweeter, green capsicums have a more savoury bite.
