Store
Keep parsnips unwashed in the fridge crisper drawer. They store well for a week or more.
Prep
Scrub clean and trim the ends. Peel if the skin is tough. Larger parsnips may have a woody core that can be cut out.
Eat raw or cook
Parsnips can be grated raw into salads. They’re especially good roasted, mashed, or added to soups. Cooking brings out their sweetness.
