Keep cauliflower unwashed in the fridge crisper drawer. Whole heads last longer; once cut, wrap tightly and use within a few days.
Prep
Remove outer leaves and trim the base. Cut into florets. Don’t ditch the stem - peel the tough outer layer and slice; it cooks just like the florets.
Eat raw or cook
Cauliflower can be eaten raw in salads or slaws for crunch. It’s also great roasted, steamed, or stir-fried. For best flavour, cook until just tender - roasting brings out a lovely nuttiness.
