  • Store
    Keep eggplant in the fridge crisper drawer and use within a few days. Avoid storing it next to fruit if possible, as this can speed up softening.

    Prep
    Rinse and trim the stem. Peeling isn’t usually needed unless the skin is very thick. Slice, cube, or halve depending on how you’re using it.

    Eat raw or cook
    Eggplant is best eaten cooked. Roast, grill, or sauté until soft and silky. Salting before cooking is optional and can help with texture in larger eggplants, but isn’t always necessary.
