This mildly licorice-flavored plant is a member of the parsley family. Just one cup of fennel contains almost 20% of your recommended daily value of vitamin C.

  • Store
    Keep fennel in the fridge crisper drawer. Wrap loosely to stop it drying out. It keeps best when used within a few days.

    Prep
    Trim off the fronds and base. Cut the bulb in half, remove any tough core, then slice or chop as needed. Save the fronds for garnish or flavour.

    Eat raw or cook
    Fennel is excellent raw, sliced thinly in salads. It also works well roasted, braised, or sautéed. Cooking softens the flavour and brings out natural sweetness.
