Store
Store mushrooms in the fridge in a paper bag or a container lined with paper towel. Avoid airtight plastic as it traps moisture.

Prep
Brush off dirt or wipe with a damp cloth. Rinse briefly only if very dirty, then dry well. Trim the stem ends if needed.

Eat raw or cook
Mushrooms can be eaten raw when very fresh. They’re also great sautéed, roasted, grilled, or added to sauces, soups, and stir-fries. Cook until golden for the best flavour.
